For most of us, the holidays tend to sneak up without much warning and suddenly you’re at home for a week or two with little ones who crave attention and entertainment. Let Dolce’s easy Easter sweet treats come to the rescue with some delicious food ideas and quality activity-time suggestions to enjoy with the kids.

Easter Sweet Treat Ideas

Lemon Cookies
(Vegan & dairy free)

Lemon cookies on an Easter themed table

Ingredients

Plain Flour – 115 g/4 oz
Wholemeal Flour – 15 g/0.5 oz
Baking Powder – 8 g/0.3 oz
Margarine – 128 g/5 oz
Sugar – 85 g/3 oz
Cornflour – 43 g/2 oz
1 Lemon
Icing Sugar – 25 g/0.9 oz

Method
  1. Cream the sugar and the margarine together until light and fluffy.
  2. Add lemon zest and half of the juice.
  3. Add the dry ingredients and mix into a soft dough.
  4. Divide the dough into portions and roll into balls.
  5. Place the dough balls on a lightly greased tray and flatten slightly.
  6. Bake in a moderate oven for 10-15 mins or when firm to the touch.
  7. Leave to cool a few minutes before removing from the baking tray.
  8. Sprinkle with caster sugar if required.
  9. You can choose to make a runny icing with the icing sugar and lemon juice to drizzle over the cookie once cooled.

Chocolate Fudge Cake

Chocolate fudge cake and fruit

Ingredients

Self Raising Flour – 160 g/6 oz
Sugar – 180 g/6 oz
A pinch of salt
Cocoa Powder – 20 g/0.7 oz
Margarine – 80 g/3 oz
2 Eggs
Evaporated Milk – 60 ml/2.1 fl oz
Water – 60 ml/2.1 fl oz
Vanilla Essence – 1 ml

Margarine – 48 g/2 oz
Cocoa Powder – 8 g/0.3 oz
Icing Sugar – 200 g/7 oz
Evaporated Milk – 36 ml/1.3 fl oz
Vanilla Essence – 2 ml/0.1 fl oz

Method
  1. Mix the flour, salt, sugar and cocoa together in a bowl.
  2. Rub through the margarine until it resembles bread crumbs.
  3. Beat the eggs, milk, water and vanilla together then stir through the dry ingredients.
  4. Place in a greased tin and bake 180 C/gas 4 for 30-35 minutes.
  5. Allow the cake to cool.

    To make the fudge topping
  6. Melt the second amount of margarine and blend in the cocoa.
  7. Gently heat the evaporated milk and add to the cocoa mix along with the vanilla and icing sugar.
  8. Beat the icing until it is smooth and starts to thicken.
  9. Spread over the cooled cake.
  10. For an added Easter twist, use confectionary such as mini eggs or shards of easter egg as cake toppers.
