Rabbit in a hole cupcakes

Makes 12

Ingredients (For the cup cakes)

100g of Plain Flour (sifted)

20g of Cocoa Powder (sifted)

120ml Whole Milk

1 x Egg

1 ¼ x Teaspoon Baking Powder

40g Baking Margarine

¼ Teaspoon Vanilla Extract

Ingredients (For the topping):

1 x Bag of Marshmallows
1 x Bar of White Chocolate
Some Pink Food Colouring
Some Green Food Colouring

250g Margarine

500g Icing Sugar

Extra equipment Needed: Piping bag, plus nozzles.

Method:

  1. Preheat the oven to 160.c (fan). Line muffin tray with paper cases.
  2. In a large mixing bowl using a wooden spoon (or electric mixer with a paddle) combine cocoa powder, baking powder, flour, sugar, a pinch of salt and butter until everything is well mixed and a sandy consistency is reached.
  3. Together in a jug, whisk; milk, eggs and vanilla extract. Slowly combine with flour mixture in the mixing bowl, pouring slowly into the bowl and mixing continuously until mixture is smooth (careful not to over-mix).
  4. Spoon mixture into paper cases approximately ¾ full. Bake in the pre-heated oven for 25-30 mins. Do the skewer test to make sure it’s cooked. Leave to cool for 3 mins until cooled slightly before turning onto a cooling rack.
  5. To make the buttercream frosting, mix together the margarine, icing sugar, vanilla Extract until smooth, then split in two bowls (saving some white vanilla icing for the tails), add pink food colouring to one, and green to the other. Then place these bot in piping bags and put in the fridge ready to pipe later. Meanwhile melt white chocolate in a bain marie, then transfer to a small piping bag. Make a small cut in the corner, and onto a baking sheet pipe out small feet like shapes. Then transfer to the fridge to set for 30 mins. Once cooled remove from the fridge and pipe on the rabbits feet pads in the pink icing. Then again back to the fridge to set. 
  6. Once the cupcakes have cooled pipe on green icing for the ‘grass’ I used a special piping nozzle for this but it isn’t needed. Then cut marshmallows in half and put one on top of the cake to represent the rabbits bottom, then grate some leftover white chocolate in a bowl. And drop a small amount of vanilla icing into gratings and roll around to resemble rabbit tail fur. Then pop on top of the marshmallow.
  7. Once feet have set, lay them on top of the marshmallow to resemble a rabbit stuck in a hole. Add mini eggs for that extra chocolate fix.
